Bean Me Up!! Kidney Bean Salad with Basil Recipe

there’s a salad bar in hyderabad ….they specialise in salads made of soybean and its by products such as tofu etc…..why am i telling you this?? its called bean me up …. that’s what i thought of when i made this salad…

i had some cooked kidney / rajma beans in the fridge and wanted to use them up….k isnt very fond of rajma…..prepared as a gravy curry, we always have leftovers….so instead this time i made as much as i could finish without force feeding myself rajma over 6 meals!! and left the boiled beans in the fridge a couple of days till i could think of something in which i could use them up…..this salad was most fitting….not to mention, the fresh home grown basil (the seeds of which were sent to me a few months ago by deeba) and lemon juice added to the flavours….serve as a side with main course….. i had a whole bowlful and made a meal out it or of it….

for the bean salad

1 cup cooked rajma/ kidney beans

1 cup peeled and diced cucumber

1/2 c diced firm tomato

2-3 T sliced green olives ( i rinsed olives preserved in brine)

salt to taste

2 T fresh basil leaves, torn

1 T fresh coriander leaves


1 t lemon juice

1/2 t freshly ground pepper

to make the dressing, whis, together with a fork in a bowl, the lemon juice, olive oil, salt, pepper, basil leaves and coriander leaves. mix together in a bowl the cucumber, tomato, kidney beans and olives. pour the dressing over the salad and tos well. chill before serving.

    i have been to Bean Me up albeit in the Goa branch…its one of the most amazing places to eat out…. the salad looks healthy…basil does enhance the flavors of the dish it is added to.
