Pan Tossed Vegetables with Paneer

every now and then when i want to purge my system of a carbohydrate overdose, i reach out for steamed and pan tossed vegetables. this is a good way of eating the required amount of vegetables ( 5-7 servings), they are incredibly colourful and really fill you up without making you feel like a goat that had a go at a cabbage patch!!

steamed veggies pan tossed with salt and pepper in olive oil takes less than the time to hard boil an egg. i cant seem to stop chopping vegetables for this once i start. i like to add about 5-6 different kinds of vegetables with varying textures and flavours, but please do go with whatever suits you or is stocked in your fridge!! i added the paneer because i had it on hand. while paneer adds protein to make this a balanced meal, boiled beans, tofu or strips of boiled chicken for a non vegetarian option will be great as well am sure.

this is a great side to garlic bread or a simple pasta. however, i like to make a full meal of it. the textures and flavours of the vegetables was

the zuchini retained its slight sweetness. the panner was just seared which allowed it to remain very very soft. this is an easy meal to fix on a busy day. i just use it to purge myself of excessive indulgences with carbs!!

Pan Tossed Vegetables with Paneer (serves 2)

3 cups assorted vegetables like broccoli, cauliflower, stringed beans, mushrooms, carrots etc.

i used:

1 cup Broccoli florets

1 cup zucchini chunks ( i used yellow and green)

8-10 button mushrooms

1/2 cup carrot chunks

8-10 cherry tomatoes

5-6 1 inch pieces of paneer/ cottage cheese

salt and freshly ground pepper to taste

1 teaspoon olive oil

in a microwave safe bowl, add the broccoli and carrots, add 1/4 cup water and zap on high for 5 mins. the vegetables should be steamed, but retain their crunch. in a non stick pan, heat the olive oil. drain the water from the steamed vegetables and add to the pan. toss it around. add the rest of the vegetables and paneer / cottage cheese to the pan and toss on high heat so that they are well coated and the paneer begins to brown and the mushrooms begin to wilt. add the salt and freshly ground pepper. toss for a few seconds more. pile onto a plate and serve immediately.

    Totally Yum ! PERFECT for a late night weekday dinner….and by the way Anu, where did you manage to get Zucchini….such fresh ones…Broccoli makes me nostalgic…I love it…there were times when I had steamed broccoli everyday…sigh…whenever I buy in the fresh stores here its soggy and wilted…….

    q mart, ratnadeep at secunderabad and madhapur and all itc choupal and heritage fresh stores in hyderabad have them babe…. except that sometimes the broccoli is yellowish, i’ve always managed to find them fresh….am told the best stuff is still available at Monda Market… havent been there in a decade now!! how’s you babe??
