If you don’t count salt and pepper and basil leaves. Ok, I cheated. But imagine a pasta dish so simple you can make it when you’re tired or cranky or hungry or all the three and enjoy a lovely meal that will make you feel instantly better.
I had some fettuccine I wanted to finish but really use any pasta you may have on hand. I finished my portion off with toasted pine nuts because the husband doesn’t like them and I’m not about to cast pearls in front of a you know what 😁
4 Ingredient pasta (makes 2 portions)
Dry pasta for 2, cook according to the pack instructions, drain and reserve some of the pasta water. Set aside.
In a frying pan or skillet , prefer this to a kadai or work, heat 3-4 tablespoons of good olive oil.
Add 4 pods of garlic, sliced thin and fry till golden
Add half a sliced onion and 1 cup of cherry tomatoes, halved, add 1/2 teaspoon salt, cover and cook for 3-4 minutes until the onions are Browning and the cherry tomatoes are wilted. Take off the heat. Add the cooked pasta, toss, taste and adjust the salt. Add freshly chopped basil and toss well. Top with a little drizzled olive oil and toasted pine nuts, serve hot.
