Instant no yeast, no oven pizza

We are in the middle of the Corona pandemic. It is day 18 of the lockdown. I have gone from being absolutely without an appetite to cooking like a maniac in 2 short weeks. I am also filming videos where possible and posting them on Instagram for others to follow and get some simple ideas to cook while stuck at home, with kids, with multiple demands for food and without the convenience of home deliveries.I am calling it #bootstrapbaking and the aim is to use as few gadgets/ ingredients as possible.Here’s the recipe (use a regular tea cup and spoons for measurements)Yeast free instant pizza (Makes 2 pizzas, 7 inches each)1 heaped cup of wheat flour1/2 teaspoon salt1/2 teaspoon baking powder or soda, whatever you have at hand1/3 or as required water to knead the doughAdd all of the above to a large bowl and knead a dough slightly firmer than your regular chapati dough. Add a few drops of oil and spread it, and leave covered to rest for 30 minutes.To make the sauce, blend the following2 large tomatoes, cut into quarters2 pods of garlic1 dried red chilliIn a pan, add 1 tablespoon olive oil and the tomato puree, 1 teaspoon sugar and salt to taste, 1/2 teaspoon dried or fresh herbs and cook on a low heat till the water is fully evaporated and you have thick dark sauce. Check for salt and spice and adjust if needed. Cool before use.To make the pizza, have a thick bottomed tava/ griddle on a low medium heat for about 10minutes to preheat it.Divide the dough into 2-3 parts, roll between your palms to make a ball and with a dusting of dry flour, roll it out using a rolling pin to a 1/3 centimetre thick round.This dough cannot be stretched by hand, so roll it out as best as you the dough onto the heated pan, quickly spread a couple of tablespoons sauce, add toppings of choice and cover and cook on medium, heat for 6-7 minutes. When the edges are lightly brown, add grated cheese and cover and continue to cook till the cheese has nicely melted.Take off the heat, cut into wedges and serve hot. Enjoy!Stay safe
