Summer Chopped Salad

I always liked making and eating salads. As a child my job when we were expecting guests was to make the salad and dessert and take out and organise crockery (plates and glasses actually, we weren’t fancy)

This one is apt for summer and you can dress it up or down depending on what else you are serving it with. Make sure to chop the vegetables to a similar size to make it easy to eat.

Summer Chopped Salad (serves 2-3)

1 medium cucumber, chopped small

1 small onion, chopped small

1 large tomato, chopped small

1/2 small green bell pepper, chopped small

1 cup of any kind of greens/ lettuce, baby spinach, chop it up

1/2 cup ripe sweet grapes, I used a mix of black and green

Mix all of the above into a salad serving or wide mouth bowl.

Dressing:

2 tablespoons Extra virgin olive oil

1 teaspoon or more fresh lemon juice

salt and pepper to taste

1 teaspoon sriracha sauce

Put all the ingredients for the dressing into a small bowl and whisk well with a fork till well mixed, pour this over the salad before serving and toss well.

Garnish

1/4 cup fresh basil, finely chopped

1/2 cup roasted nuts – I used pine nuts but almonds/ peanuts or cashews work just as well

I served this with a side of roasted carrot and broccoli and pan grilled chicken cutlets
